In a large enough pot to hold a 3.5 lb. beef chuck roast, heat 3 Tbsp olive oil.
Brown both sides of roast, 5 minutes + or -, per side, on fairly high heat
Reduce heat to medium low.
Add liquid to nearly cover meat.
Last night I used:
1 can Bud Light, because everyone hates Bud Light,
I cup of red wine, because that was left in the bottle,
and I cup of beef stock. Cover and cook.
It will take about 3 to 3.5 hours. If you choose, you can put it in the oven at about 325 degrees for the same time.
It is hard to cook it too long- Just check with a fork until tender. But don't bother until at least 2.5 hours.
